1. I think the master image in the entire movie is the list of names, either being read off, given, or typed. The Nazi's in the beginning had to type a list of all the Jews to be rounded up and sent to camps. Then, to work for Schindler, the Jews had to give their names to Nazi officials who would check it against a list to see if they could work. Again, we see actual people. In the camps, roll call was a Nazi calling out names from a list to see who was left. This shows us the Jews as actual people, not just faces, but people we can connect with.
2. Schindler is first shown with alcohol, cigarettes, and women. I believe Spielberg was trying to show him as a normal man, who wasn't a saint...
