In Eliezer Wiesel's book Night, the Jewish community was celebrating Passover during the time Sighet was invaded. Passover is a celebration of the Jewish past, and is honored through many traditions. One of the traditions that is kept throughout the world is the use of a seder plate. The seder plate includes six dishes: karpas, maror, charoset, zero'ah, beitza, and three matzot. These dishes are significant not only in how they are prepared, but for what they represent.
Karpas is one of the vegetables on the seder plate. Passover is a spring festival that honors the birth of the Jewish nation. The green of this vegetable symbolizes rebirth and rejuvenation. Karpas also corresponds with the sefirah of hod, otherwise known as thanksgiving.
