"Why the fries taste good", a chapter in Fast Food Nation by Eric Schlosser brings into view the little known secrets that made the French fry industry successful. The chapter serves as an interesting history of the French fry as well as a look into the unappealing truth about the flavor factories, which give Mcdonald's and other fast food chain French fries their signature taste.
Schlosser begins by giving us a brief history of the potato. Much of the potato's success can be traced back to one man, JR Simplot. The chapter goes on to describe Simplot's rags to riches story. He is introduced as someone who has taken a lot of risks in his life, a man with the "sly grin of a gambler who's just won." After running away from home, Simplot's first job was a potato sorter, paving the way to his lucrative career. Soon after, he started his own business in potato processing, which he bought with money he had made from farming and raising hogs.
Schlosser then tells us the history of the frozen French fry. JR had invested money in freezing and dehydrating which later turned out to be a very profitable move...
