For two months our class begged to host this catering event. The class was food service, and we had a catering company. The local Cattleman's Association had their annual fall meeting/dinner, and our class had the honor of hosting it. I say honor because over 150 people were to show up from all over the south coast and if we made a good impression then we could get a lot more business. My classmates, to be the head cook for this event, voted me. I had to think of everything; everything from the setup to the appetizers to the main course, how to serve it, and I even had to stay after to clean up while everyone else went home.
I researched recipes, appetizers, and dish combinations for two weeks and finally came up with a service plan. First I planned the table setup and how the food was to be served, I decided on a buffet line due to the amount of people and little service time. From the right, there was a green salad, pasta salad, potato salad, steamed broccoli, garlic mashed potatoes, and then finally prime rib. The day before the big event our class made all of the salads, and got the broccoli and potatoes ready to be prepared...
