The first thing about cake decorating is baking the cake and icing it. An easy way to make sure your cake doesn't stick is to spray it and dust it with flour, and then if you still see shiny spots add more flour again. When the cake is done baking make sure you cool it complete before decorating.
For many people, icing the cake is the hardest part of decorating. Like any other technique you have to learn it before complete something. Cake decorating is not a special skill, just practice. When you start icing your cake you want to make sure you have everything next to you so it doesn't take you long. I learned to ice the sides of the cake first then go to the top of the cake. I think it's easier to do the sides first. To smooth out the top and sides of your cake, you take the spatula and dip it into hot water and then press down lightly on the cake and hold it still and carefully turn the cake plate to smooth out the cake...
